Ready, Aim...Shoot!

Many years ago, long before I joined The Roman Military Research Society (or THE RMRS), a teacher inspired his pupils to build a catapulta, or bolt-shooting Roman period artillery machine.  I guess the project was in part a history lesson combined with developing practical engineering skills.  Whatever the motive, however, the resulting machine was eventually gifted to the Lunt Roman Fort in Baginton near Coventry.  When I first encountered this machine it was part of a static display in the Fort's small horea (granary) museum, and there it sat, unobtrusively, for many years.

A recent refurbishment of the Lunt Fort's granary saw the catapult placed in storage where it could easily have remained, forgotten.  Except for the fort's Engagement and Development Manager, Paul Thompson, who decided the machine would be an ideal addition to the new displays and, if working, could demonstrate how it works, and shoots, to school parties and other visitors.

So, who could do the repairs?  Enter THE RMRS or more specifically Len Morgan and myself. For my part, my knowledge and understanding of ancient Greco-Roman artillery has been inspired and much improved by three mentors: Alan Wilkins FSA, Len Morgan and the late Tom Feeley.  Over decades of research and practical experimentation, these "three wise men" have done much to promote the wider understanding of such machines.  Alan, for example, has spent a lifetime deciphering the manuscripts written by authors such as Philon, Biton and Vitruvius who recorded their thoughts and their technical treatises in ancient Greek or Latin.

Sadly, what survives for us to work with today are often copies made in the past by scribes practicing or perfecting their craft.  Since such men were not engineers, crucial textual information can be mistranslated, transcribed incorrectly or omitted altogether.  Alan, therefore, has been instrumental in identifying and correcting various errors or deducing the often essential but missing information.  Together with Len and Tom, both experienced engineers, models and full-size machines have since been recreated to test theories and demonstrate these artillery pieces to academics and the wider public.

A great deal of work had already gone in to getting the machine to the stage shown opposite.  The trigger mechanism was removed and renovated to improve its operation and avoid undue damage to the bowstring.  A new pull back cord was fitted connecting the windlass to the trigger mechanism, itself attached to the slider.  Even the pawls on the trigger assembly were chamfered so they did not foul the ratchet when the slider is pushed forward.

Most importantly, as the spring washers were of turned wood, these were reinforced with steel pins and collars to resist the forces generated when spanning the weapon and when shooting.  This measure proved to be a good move as a crack quickly appeared when the weapon was tensioned for the first time.  The original wooden levers were replaced with mild steel versions.  This was necessary because it is around these levers, or bars if you prefer, that the cord is wound to create the spring bundles.


Into the spring bundles the bow-arms are inserted, as can be seen opposite.  Rotating and pinning the washers in position imparts a twist to the cord bundle.  Pulling back the bow-arms twists the bundles even further increasing the potential energy stored in each spring.  This is where such torsion engines get the power to project missiles.

The penultimate task was to fit a new bow-string, whipping and sewing the ends together to form the loops that hook onto the bow-arms.  Finally, the vane ends of the bolts were reduced to fit between the fingers of the trigger such that when loaded they rest cleanly against the bow-string.

With all the work complete it was testing time.  The materials used in its original construction were never going to make the machine particularly powerful but the ol' girl still shoots.  So, all being well, visitors and especially school parties will soon get to see the Lunt Fort's cataputa in action once more.

Dispelling Some Myths: Gladiators


Gladiators were the sporting heroes of the ancient world. The archaeological record shows them celebrated in everything from mosaics to graffiti. Motifs of gladiators are found on nearly a third of all oil lamps from Roman archaeological digs throughout the Empire. But who were they? How much did they risk each time they entered the arena? What were their chances of getting out alive?

This most Roman of entertainments was not their brainchild. That dubious honour goes to the Etruscans, an ancient Italian people who emerged near the beginning of the first millennium BC. At Etruscan funerals, gladiators fought in bouts to the death perhaps as a form of human sacrifice. Since the Romans derived much of their customs from the Etruscans it was perhaps inevitable that, as they became the dominant force on the Italian peninsula, they would embrace gladiatorial contests. While the origin of Roman gladiatorial combat is open to debate, there is evidence for it becoming part of funeral rites (known as munera [1]) during the Punic Wars of the 3rd-century BC. The fighters in these early munera fought with swords, hence the name. Decimus Junius Brutus, later a consul, was said to have been the first to put on a gladiator show to honour his dead father in c. 264-262 BC. Thereafter munera rapidly became an essential feature of politics and social life in the Roman world. In 65 BC, Gaius Julius Caesar used his position as aedile (junior magistrate) to begin a programme of public shows to secure, in the words of the historian Suetonius, “the goodwill of the masses”. Caesar laid on 320 gladiatorial bouts and animal fights in both his own name and in association with fellow aedile, Marcus Bibukus. Of course, being Caesar, he did so in such a way that it ensured it was widely assumed the occasions were all his own work. The 320 bouts may seem a lot, but the number represents a reduction in Caesar’s original plans. He had organised such a large number that his political opponents in the Senate were terrified by the thought of some many armed men in Rome on Caesar’s payroll. A law was thus passed capping the number of bouts. The fears were well founded as gladiators would later supply muscle to thuggish politicians in the late Republic. In 57 BC, the notorious senator Publius Clodius Pulcher employed a gang of gladiators to rush those assembled to vote on a measure. They attacked and killed some of the crowd.

The popularity of gladiatorial games led to ever more lavish and costly ones featuring armed combatants entertaining audiences in the Roman Republic and Roman Empire in violent confrontations with other gladiators, wild animals, and condemned criminals. Irrespective of their origin, gladiators offered spectators an example of Rome's martial ethics and, in fighting or dying well, they could inspire admiration and popular acclaim.

All were slaves
  If you have watched Ridley Scott’s 2000 film “Gladiator”, or the more recent “Gladiator II” (2024), you can be forgiven for thinking that all fighters in the arena were slaves. In one sense, this is true. The vast majority fighting in the arena were there under duress, drawn mainly from the ranks of criminals or prisoners-of-war. A few might achieve “celebrity status” [2] - if contemporary high and low art (such as graffiti) is anything to be believed - but in the strict social hierarchy of the Roman world, all gladiators were counted among the infames [3]. In Roman law, anyone condemned to the arena or the gladiator schools (damnati ad ludum) was a servus poenae (slave of the penalty), and considered under a sentence of death unless manumitted (freed).

Only slaves found guilty of specific offences could be sentenced to the arena while citizens found guilty of certain offences could be stripped of citizenship, formally enslaved, then sentenced. Slaves, once freed, could be legally reverted to slavery in certain circumstances. Arena punishment could be given for banditry, theft, arson, and for treasons such as rebellion, census evasion to avoid paying due taxes, and refusal to swear lawful oaths.

Offenders seen as particularly obnoxious to the state (noxii) received the most humiliating punishments. By the 1st-century BC, noxii were being condemned to the beasts (damnati ad bestias) in the arena with little chance of survival, or were simply forced to kill each other. By the early Imperial era, some were compelled to participate in humiliating and novel forms of mythological or historical enactment, culminating in their execution. Those judged less harshly might be condemned ad ludum venatorium (combat with animals) or ad gladiatorium (combat with gladiators) and armed as thought appropriate. These damnati at least might put on a good show and retrieve some respect and, very rarely, survive to fight another day. Some may even have become “proper” gladiators. Yet, as infames, gladiators were largely despised as slaves, socially marginalised, and segregated even in death.

We know from contemporary accounts that some gladiators were volunteers who risked their lives and their legal and social standing as freemen by appearing in the arena. Their reasons for giving up their freedom and risking serious injury or death in the arena may have been many and varied. A condemned bankrupt or debtor, for example, might be accepted as novice (novicius) whereupon he could negotiate with his lanista (manager of gladiators) or editor (sponsor of the games) for the partial or complete payment of his debt. For some, the potential rewards and the opportunity to escape poverty were motivation enough. For others, perhaps it was the fame and celebrity status that appealed. A few may have entered the arena purely for the thrill or love of fighting.

In the Imperial era, these volunteers required a magistrate's permission to join a ludus (gladiator school) as auctorati. If granted, the school's physician assessed their suitability. Their contract (auctoramentum) stipulated how often they were to perform, their fighting style and earnings. Faced with runaway re-enlistment fees for skilled auctorati, the emperor Marcus Aurelius set an upper limit at 12,000 sesterces. Among the most admired auctorati were those who, having been granted manumission, volunteered to continue fighting in the arena. Some of these may have been highly trained and experienced specialists for whom there was no other practical choice open to them. The legal status of auctorati - whether slave or free - remains uncertain.

Bound by sacred oath  All prospective gladiators, whether volunteer or condemned, were bound to service by a sacred oath (sacramentum) vowing “to endure to be burned, to be bound, to be beaten, and to be killed by the sword” (Petronius, Satyricon, 117).  Novices trained under teachers (doctores) who were most likely retired gladiators skilled in particular fighting styles. Lethal weapons were prohibited in the schools - weighted, blunt wooden versions were probably used. Fighting techniques were probably learned through constant rehearsal as choreographed “numbers” to produce the preferred elegant, economical style. Training included preparation for a stoical, unflinching death.

Gladiators were typically accommodated in cells, arranged in barrack-like buildings set around a central practice arena. Once in the school their training required intense commitment, and discipline could be extreme, even lethal. Those who performed well, however, could ascend through a hierarchy of grades (sing. palus) in which primus palus was the highest [4]. Indeed, Juvenal describes the segregation of gladiators according to type and status reinforcing the idea that within the schools were rigid hierarchies: “even the lowest scum of the arena observe this rule; even in prison they are separate.” As most combatants were from the same school, segregation kept potential opponents separate and safe from each other until they enter the arena.

There were many different types of gladiator. One of the most recognizable was the retarius, a term derived from rete meaning “net”, who wore no helmet and darted about the arena equipped with a net, a trident and a dagger. The murmillo, armed with a sword and small shield, was named after the Greek saltwater fish mormylos because of the long, high crest on his helmet. A retarius fighting a murmillo was a popular pairing symbolising the “net man”, or “fisherman”, hunting the “fish”. The retarius could also be pitted against the secutor (“pursuer”) armed with a sword and large shield. The latter wore a plain helmet with no crest, protecting him from being snagged by the retarius’ net, which also had two smaller eyeholes as defence against his opponent’s trident. Gladiator specialisation was based on physical attributes. The most heavily armed had to be strong, while the likes of retarii needed to be quick, sure-footed and agile. Ethnicity may also have been a factor since part of the entertainment was role-playing. Gladiator bouts were as much about theatrics as violence: in modern terms, mostly MMA with a dash of WWE [5].

To the Death
  Gladiator deaths in the arena were probably not as high as many modern commentators often portray. Gladiators were expensive to provide for and train, and perhaps to protect the investment, most only fought two or three times per year.

A gladiator’s price was fixed according to his rank, status and degree of success, with their market value being highly relevant if they died in the arena. His death became a chargeable item by which the owner, usually the lanista, would be recompensed. In the 1st-century AD a common day-labourer in Rome typically could expect to be paid two sesterces per day. Compare that with a first grade gladiator in the lowest class of munera who may have commanded a maximum price of 5,000 sestertii which, according to Susanna Shadrake, is the equivalent of about £32,000 today. This is hardly a trivial sum of money or investment to be carelessly discarded (Shadrake, 2005, 91).

The Emperor Augustus for example, prohibited combats sine missio (in this sense “without mercy”), or to the death. This was partly to recognise the investment value of a skilled fighter but mostly to limit extravagant displays and the political value to those staging contests (editores) by influencing voters with lavish entertainment. In the 1st-century AD, the chances of survival have been estimated at 9:1 based on analysing the results of contests. If a gladiator lost, the ratio reduced to 4:1 and ultimately depended on a successful appeal for missio (“mercy”). Under later emperors, however, a gladiator’s chances of survival deteriorated as more and more fights were to the death.

If a gladiator survived three years of fighting in the arena, however, he would win his freedom. Those who did often became teachers in the gladiator school; and one of the skeletons excavated at Ephesus in Türkiye appears to be that of a retired fighter (Kupper & Jones, 2007). None of this denies the facts that gladiators died in the arena, just that their chances of survival varied at different times.

Men only
  For convenience we have used the male pronoun throughout, but this usefully reveals another “Hollywood” myth: that gladiators were all men. To be fair to the film “Gladiator” there is a scene where the hero Maximus (played by Russel Crowe) and an all-male band of fighters face at least one chariot borne gladiatrix (“swordswoman”; pl. gladiatrices). Even so, it was thought for some time that scenes such as that portrayed in the film and women fighting in the arena were a rare occurrence and dismissed as mere novelty acts.

Ancient voices  Yet we know women did perform in the arena as we have several contemporary eyewitness accounts. According to the biographer Suetonius, for example, writing of games held by Emperor Domitian (reigned AD 81 - AD 96) states that women as well as men took part as gladiators (Suetonius, Life of Domitian, 4.1). Around the same time Tacitus informs us that “many women of rank…disgraced themselves in the arena” in gladiatorial games held by Emperor Nero (Tacitus, Annals, 15.32). During a festival in honour of Emperor Nero’s mother, Cassius Dio also notes that women of both senatorial and equestrian rank “drove horses, killed wild beasts and fought as gladiators, some willingly, some sore against their will” (Dio, Roman History, 62.17.3). It should be noted that the involvement of elite women was more of an issue of status rather than gender, as the participation of elite men was shocking as well. In Roman society the upper classes must not entertain lower classes, as the former were at risk of being seen as beneath their observers.

Legislation during the earlier reign of Emperor Augustus is a major clue. It threatened freeborn females with infamia should they participate as gladiators. Much later, around AD 200, Emperor Septimius Severus’ enacted a law forbidding fights between women in Rome’s Flavian Amphitheatre (“The Coliseum”). Significantly, laws are rarely pre-emptive, and historians such as Murray (2003) and McCullough (2008) both agree that legislation in general existed to curb behaviour that was socially unacceptable. In essence, for punishment to be warranted, the crime must have occurred. Both pieces of legislation therefore imply that female gladiators existed.

Sculptural evidence  A bronze sculpture from the 1st-century AD (see right), kept at the Museum für Kunst und Gewerbein in Germany, was long thought to be a woman holding a cleaning tool known as a strigil. In 2011 the statuette was re-evaluated by a Spanish scholar and it now thought she was more likely a female gladiator raising a short, curved sword called a sica aloft in triumph. Significantly, she is also bare-chested, as gladiators typically fought (Beck, 2022).

One of the best pieces of evidence is in the collection of The British Museum. It is a 2nd-century AD carved marble relief, recovered from Halicarnassus in Türkiye, commemorating either the release from service or the discharge after a draw of two female gladiators named “Amazon” and “Achillia” (see right). Their stage names are inscribed below each figure on the platform upon which both fighters are standing. At their feet, to each side of the platform, are either the heads of two spectators or the fighters’ helmets. Unfortunately, these objects cannot be positively identified although the latter is favoured as the better explanation given the context. Although missing the head, the figure on the right is the clearest indicator that the two are gladiatrices as “Achillia” is the female derivation of “Achilles”, the Homeric hero of the “Iliad” [6]. Kathleen Coleman also points out the peculiarity of the women's names as a clear reference to the myth of Achilles and Penthesileia, queen of the Amazons. It could be that this pair of female gladiators often fought each other as a re-enactment of mythological scenes (Coleman, 2000, 487-500).

Both fighters are armed with the same equipment as male gladiators, albeit without helmets, and are advancing to attack with swords and shields. Both are wearing padded leg protection and something similar on their sword arm. Apart from body defences, each figure wears subligaria, the elaborately folded loincloth held in place with a wide belt (Latin: balteus). The term subligaria derives from the verb subligare meaning “to bind below” (sub under + ligare to bind). As shown right, to secure such garments a “long piece of material has to be tied around the waist and then [passed] between the thighs, leaving a section of cloth to emerge at the front, tucking [it] under the knot at the front waist fastening, and out over the crotch area, like an apron” (Shadrake, 2005, 168). Viewed from behind the loincloth has “unflatteringly [been] referred to as a ‘nappy’ or ‘diaper’” (Shadrake, 2005, 168). Most importantly, the wearing of subligaria accorded with the Italian custom of preserving modesty by covering the genitals.

That said modesty seems have been forgone as, like the aforementioned bronze statuette, each woman’s torso appears to be naked from the waist up. While this seems to have been the case with most categories of gladiator, did women perform topless? If they did, is this one of the reasons gladiatrices were thought of as simply a “titillating spectacle”? Or were Amazon and Achillia depicted bare breasted simply to advertise their gender? Either way, fighting topless in the arena would be impractical and uncomfortable and thus the wearing of a breast band called a strophium [7], as worn by women exercising in the mosaic from Villa Casale, Sicily (pictured below), seems much more likely. The lack of definitive evidence makes it difficult to draw any safe conclusions, however.


Reading the bones  Excavations in 2007 identified what scientists believe is the first discovery of an identifiable graveyard for gladiators at Ephesus in Türkiye, once a major city of the Roman world (Deggin, 2015). Marked by three gravestones depicting gladiators, the Ephesus graves yielded thousands of bones from which researchers identified around 67 individuals, mostly aged between 20 and 30 years old. Analysis of their skeletal remains and the injuries present on the bones gave new insights into how the deceased lived, fought and died. Most strikingly was the observation that several “gladiators” bore wounds that had healed during their lifetimes. Apart from being evidence that gladiators were valued enough to received good medical care, it was noted that they had not suffered multiple wounds as might be expected in a melee or close-quarters combat. The observable evidence seemingly proves they fought in organised duels, following rules that were enforced by a referee.

It seems fairly evident that gladiators needed some looking after. For example, we know the Greek physician and philosopher Claudius Galen’s first professional appointment was as a surgeon to gladiators [8]. In AD 157, aged 28, he had returned to Pergamon as physician to the gladiators of the High Priest of Asia. Over his four years in post, he learned the importance of diet, fitness, hygiene, and preventive measures, as well as living anatomy, and the treatment of fractures and severe trauma, referring to their wounds as “windows into the body”. Only five deaths among the gladiators occurred while Galen held the position, compared to sixty in his predecessor's time, a result that is in general ascribed to the attention he paid to their wounds.

We know that gladiators generally fought one-on-one, with armour and weaponry designed to give conflicting advantages. For example, and as previously mentioned, “a lightly armoured, helmetless gladiator with a net and trident, a “retarius”, would typically be matched with a slower moving, more heavily armoured fighter armed with a large helmet, sword and shield” (Deggin, 2015). Most matches employed a senior referee (summa rudis) and one or more assistants, who are often shown in mosaics with long staffs (rudes) to caution or separate opponents at some crucial point in the match. Referees were usually retired gladiators whose decisions, judgement and discretion were, for the most part, respected; they could stop bouts entirely, or pause them to allow the combatants rest, refreshment and a rub-down. The parallels with modern boxing matches divided into rounds and with corner men are inescapable.

Britannia  Gladiatorial fights may have begun life as a niche activity at Etruscan funerals, but over the following centuries they were exported to every corner of the expanding Roman empire. Far-flung Britannia was not exempt as evidenced by the physical remains of amphitheatres found in London, Chester, Cirencester, Silchester, Dorchester, and Caerleon. The Colchester Vase [9], dating to AD 175, depicts two gladiators, Memnon and Valentinus (believed to be their stage names) in action. The latter, the retarius Valentinus, is shown with a raised forefinger indicting his submission to his secutor opponent, Memnon. An inscription on the vase reads: “Memnon Valentinus of Legion XXX”, who were probably notable local gladiators in their day (the late second century).

For the most part, amphitheatres in Romano-Britain were built by creating turf embankments and digging out the arena. By the early second century, the Cirencester example had been formed by digging out and adapting a quarry on the south-west side of the town. Stone walls were used to create revetments, entrance passageways (vomitoria, sing. vomitorium), and the arena wall. Dorchester’s amphitheatre was made by adapting a Neolithic henge monument that rather conveniently supplied ready-formed earth embankments around an arena-shaped and sized enclosure. Beneath the Guildhall in London lies its amphitheatre, which once lay close to the fort of the governor of Britannia’s garrison. It is open to the public today. Likewise, visitors can wander around the arena of Legio II Augusta’s amphitheatre in Caerleon, South Wales. Within the stone-revetted, earthen embankments gladiators would have fought to entertain the garrison’s soldiers and local citizens. They would have sat on wooden benches, long since rotted away, that may have seated 5,000 or 6,000 spectators - enough space for the entire Second Legion. Caerleon’s amphitheatre may have doubled as a venue for speeches to the troops and for formal military exercises or displays.

The Dover Street Woman  In 2000, the discovery of the “Great Dover Street Woman” was announced following excavations in 1996 at 165 Great Dover Street, Southwark in London (Bateman, 2008, 194-198). Museum of London Archaeology (MOLA) identified the grave of a Romano-British woman dating from the early 2nd- to mid-3rd-century AD. She had received a bustum funeral, a form of cremation above a pit into which her remains eventually fell and were then covered. Although a style of burial rare in Roman Britain, a small amount of human bone survived from which analysis of a pelvis fragment concluded the skeleton was of a female in her 20s. Added to the grave fill after the cremation were eight unburnt ceramic oil lamps and eight tazze [10]. Evidence was also found for molten glass, gold textile, burnt pinecones, chicken, bread, and dates forming part of the cremation ritual (Bateman, 2008, 194-198).

Archaeologists at MOLA proposed that the remains might represent the first female gladiator discovered. The presence of a gladiatorial image on one of the oil lamps, three others showing the Egyptian god Anubis who is associated with the passage of the dead to the underworld, and the style of the burial were suggestive of this interpretation (Bateman, 2008, 194-198). In the 2000 report of the excavations by MOLA, Angela Wardle concluded that while the interpretation of this cremation as a gladiator “can only be speculative...it is certainly possible” (Wardle, 2000, 27-30). This interpretation is contested because the excavated evidence is far too speculative. As Alexandra Sills points out: “attempts to identify the remains of Roman women as gladiators, such as the Great Dover Street lady of London, are often influenced by the desire for a good story rather than conclusive material evidence” (Sills, 2021). Sadly, in an era where funding for archaeological work is tied inextricably to headline grabbing public relations, one can see why such a tenuous gladiator connection was seized upon. Without further conclusive proof perhaps Nick Bateman is right to conclude that the burial was more likely to represent a complex religious and ritual process which incorporated gladiatorial images rather than representing the life experience of the woman as a gladiator (Bateman, 2008, 194-198). Perhaps the final word on gladiatrices should go to Susanna Shadrake, author of “The World of the Gladiator”, who points out: “the subject of female gladiators has always aroused strong emotions; then as now, they have been seen as aberrations or novelties” (Shadrake, 2005, 185). As mentioned previously, there are a few references to women fighters in the literary sources, and some evidence from inscriptions on monuments. From such evidence it is reasonable to say gladiatrices clearly existed “as an authentic gladiatorial category rather than a fevered fantasy” (Shadrake, 2005, 185). Such proof of their existence however does not guarantee how frequently women appeared in the arena.

We have only briefly touched the subject of gladiators, but hopefully we have dispelled three of the common misconceptions or myths about them. Not everyone who entered the arena began life as a slave, although volunteering to do so invited a form of public disgrace. Both men and women fought but not always to the death as movies might lead us to believe. That is not to say it was a life without risk as all combat is inherently dangerous. Yet one cannot help wondering whether it is the thrill of the dangers that continues to attract audiences to this day.

Munera were public works and entertainments provided for the benefit of the Roman people by individuals of high status and wealth. Munera (sing. munus) means “duty, obligation” in the sense that an individual had a responsibility to provide a service or contribution to his community. The word was often a synonym for gladiatorial combat, which was originally sponsored as a funeral tribute at the tomb of a deceased Roman magnate by his heir. Munera depended on the private largesse of individuals, in contrast to ludi, which were games, athletic contests or spectacles sponsored by the state.

Stone Age Barbecue

In the summer of 2015 archaeologists from the University of Edinburgh attempted to recreate a style of Stone Age cooking based on their discovery of a 9,000 year old barbecue pit.

Over the last three years excavations have been ongoing at Prastio Mesorotsos situated in the Diarizos Valley outside of Paphos on the Mediterranean island of Cyprus. The site, which has been almost continuously occupied from the Neolithic era to the present, offers a wealth of insights in to the practices of our ancestors but it is on ancient culinary techniques that we will focus.

A stone-lined, ash-covered pit measuring about 2.5 metres (8 feet) across and 1 metre (3 feet) deep was discovered, but it was only this summer that the archaeologists could say with some certainty they were looking at an ancient oven. Its sheer size, however, was troubling. For an oven of this type the newly discovered pit was thought to be at the theoretical maximum since to keep such an oven hot enough would require a significant amount of energy.

With no one sure whether cooking would have been even feasible, but in the spirit of the Stone Age (and experimental archaeology), it was decided to recreate a prehistoric pit feast. The aim was to feed 200 people with pig and goat, slow-roasted underground and thus test the culinary methods of Neolithic cooks.


A replica pit was duly dug, although modern tools were used as it was felt that getting to grips with stone tools would have taken too long. Searching for the other necessary elements to cook the meal stuck to ancient methods, however. The archaeologists scoured local riverbeds for big igneous stones that would retain and radiate heat, and they hauled their choice rocks uphill in sacks or with a yoke made from a stick and baskets - a time-consuming and painstaking task.

Local clay was collected in buckets to hold the 400 stones in place around the outside of the oven. The team made its own charcoals out of lemon and carob wood. They also tanned 10 goat skins that would be used as parcels for the meat and crafted meat hooks out of sapling wood.

Bones found at the site provided compelling evidence that the prehistoric inhabitants ate pigs, goats and deer. Thus it was decided to source a 70 kg (150 lbs) pig (skin on, head detached) and a 38 kg (80 lbs) goat from a local butcher. Deer, now extinct in Cyprus, was left off the menu.

Days before the feast, the team let a fire burn in the stone-lined pit for 24 hours so that the ground, possibly still cold and damp from a wet winter, would not suck the heat out of their oven. The charcoal was lit the day before the feast and were covered with another layer of stones to prevent the meat directly touching the heat source. When the oven was ready, the pig, stuffed with bulgur wheat, wild fennel stems, anise and bay leaves before getting sewn up tightly with hemp twine and packed into a blanket, was placed on th
e hot stones. Similarly the goat meat, which had been chopped, spiced with herbs like wild oregano and divided between two parcels, was placed in the pit.

More herbs were packed on top of the meat, before the oven was sealed with stones and a clay-and-mud mixture. Another fire was then lit on top of the closed pit so that heat would not escape overnight.  Slow roasting ensured that the meat was tender and infused with the tastes of lemon wood, carob and bay leaf.


Much was learned through the experiment. Firstly it was proved that a pit of the size found could indeed cook sufficient food to satisfy 200 guests and still have leftovers that could have sustained them for even longer. It is thought that fat rendered from the pig may have been used to preserve leftover meat. While the fat will turn rancid, the meat will not and can be stored for up to a year by this method.

While preparing the pit roast, the team also inadvertently recreated some of the more elusive, sensory elements of such a prehistoric feast. The spectacle of the three-day-long fire required to heat the oven would not have been a regular experience and thus may well have had a special significance for the local community.  The light and heat generated throughout the night was probably as much an important part of the feast as the gathering of people to enjoy the result. It is hard not to imagine storytelling, dancing and laughter round the communal fire - much as many of us often enjoy today.

Pheasant

The common pheasant (Phasianus colchicus) is native to Asia but has been widely introduced elsewhere as a game bird. Their original range extended from Taiwan and mainland China through Korea, Siberia, Manchuria to the Caspian and Black Seas. It was most likely on the Black Sea coast and along the Rioni River in what is the western part of modern-day Georgia that the ancient Greeks first encountered these distinctive birds.

The bird’s scientific name translates from Latin as "pheasant from Colchis" where colchicus is a further reference to the area on the Rioni River. This major Georgian river was called Phasis by the ancient Greeks and their term corresponding to the English "pheasant" is Phasianos ornis (Φασιανὸς ὂρνις) means exactly that: "bird of the river Phasis".

The birds are found in woodland, farmland, scrub, and wetlands. In its natural habitat the common pheasant lives in grassland near water with small copses of trees.

The pheasant was certainly known to the Romans and the bird was extensively introduced in many places across the Empire eventually becoming a naturalised member of the European fauna. As far as we can determine the bird was not known in the Roman province of Britannia having not been introduced that far West. Pheasants may have been naturalised in Great Britain around the 10th century AD, perhaps earlier, but seemingly disappeared from most of the isles in the early 17th century. It was rediscovered as a game bird in the 1830s having been ignored for many years.


Today the pheasant is a common sight in Britain's fields, woodland and, sadly for those struck by vehicles, its roads.  If the risk of becoming roadkill is not enough, then the open season for pheasant shooting begins on October 1st...

Romans in China?

Every so often, over the last decade at least, our modern-day bards, the media, regurgitate a story about “European-looking” people in north-west China claiming ancient Roman descent. This tale of a “lost legion”, spawning generations of Chinese villagers with fair hair and green eyes, has an appeal in itself that perpetuates its stranglehold on popular imagination. Most recently the author encountered the story posted on social media and, unsurprisingly, it once again grabbed the attention of various commentators whose belief in its "obvious truth" seem unquestioning.

At first the stories were interesting and in their telling seemed, well, plausible. Yet on closer inspection can we be so certain that the evidence presented holds up to scrutiny? Ever the sceptic, could there be a much simpler explanation?

The Daily Mail (29 Nov 10), in the footsteps of a Daily Telegraph article from February 2007, reported that DNA tests have shown the residents in a windswept village in Gansu are the blond-haired, blue-eyed descendants of Roman mercenaries who allegedly fought the Han Chinese 2,000 years ago. While no one in the modern town of Lou Zhuangzi is fair, and there is no proof that the Romans ever set foot in Gansu before the Christian era, there has been frequent debate on whether a group of Romans offered their services to the Huns against the Chinese in the battle of ZhiZhi in 36 BC before settling in the Gansu village of Liqian. Before Marco Polo's travels to China in the 13th century, the only known contact between the two Empires was a visit by Roman diplomats in AD 166. Yet the story persists that 145 Romans, taken captive, had wandered the region for years before becoming mercenaries. Indeed, the idea has spawned various theories, TV documentaries, novels and, perhaps significantly, commercial opportunities for the impoverished area.

It was back in 1955 that Homer Hasenpflug Dubs, an Oxford University professor of Chinese history, first proposed the theory in a paper entitled “A Roman City in Ancient China”. In it Dubs stated that some of the 10,000 Roman prisoners reported by Plutarch as taken by the Parthians after the defeat in 53 BC of Marcus Licinius Crassus’ army at Carrhae in southeastern Turkey made their way to ZhiZhi in Uzbekistan to enlist with Huns against the army of the Chinese Han Dynasty commanded by General Chen Tang. Prof Dubs theorised that this group of legionaries made their way eastwards and thus how a mercenary troop "with a fish-scale formation" came to be captured by the Chinese 17 years later. Interestingly, Chinese accounts of their victory at the battle of ZhiZhi note facing a unit of soldiers numbering more than 100 who used an unusual “fish scale formation” - now popularly associated with a testudo - and the use of wooden fortifications foreign to the nomadic Huns.

Dubs postulated that after the battle the Chinese employed the Roman mercenaries as border guards, settling them in Liqian, a short form of Alexandria used by the Chinese to denote Rome. The professor's hypothesis took almost 40 years to reach China. During Chairman Mao's rule, ideas of foreign ancestry were not ideologically welcome and the story was suppressed, and the issue has divided experts ever since. While some Chinese scholars have been critical of Dubs' theory, others went so far as to identify Lou Zhuangzi, a settlement in north-western China on the fringes of the Gobi desert, more than 200 miles from the nearest city, as the probable location of Liqian in the late 1980s.


In the 1990s Chinese archaeologists were surprised to find the remains of an ancient fortification in Liqian that appeared strikingly similar to Roman defensive structures. Yet by 1999, no academic papers had been published on the subject, and no archaeological investigation had been conducted.  Despite this the media, residents and local government have remained unfazed. County officials, sensing potential tourist revenue, erected a Doric pavilion in Lou Zhuangzi (pictured opposite), while the county capital of Yongchang decorated its main thoroughfare with statues of a Roman legionary standing next to a Confucian scholar and a Muslim woman, as a symbol of racial harmony. Even entrepreneurs have caught on: in "Imperial City Entertainment Street" there is a “Caesar Karaoke” bar.

In 2005, after local authorities loosened control over genetic research, scientists and historians took blood samples from 93 people living in and around Liqian in the hope of that DNA tests would explain the unusual number of local people with western characteristics - green eyes, big noses, and even blonde hair - mixed with traditional Chinese features. Typical of these residents is Song Guorong who, with his wavy hair, six-foot frame and strikingly long, hooked nose, stands out from his short, round-faced office colleagues. He epitomises local sentiment: "I really think we are descended from the Romans. There are the residents with these special features, and then there are also historical records about the existence of these people long ago."

Another resident, Cai Junnian, pictured opposite, said his ruddy skin and green eyes meant he was now nicknamed Cai Luoma, or Cai the Roman, by friends. He become a local celebrity, and was flown to the Italian consulate in Shanghai to meet his supposed relatives. Mr Cai said his great-grandfather told him that there were Roman tombs in the Qilian mountains a day and a half's walk away, but he had never connected them to the unusual appearance he inherited from his father.

The 2005 DNA test results confirmed some of the villagers were indeed of Caucasian origin, leading many to conclude their descent from an ancient Roman army, although others remained less certain. As Yang Gongle, of the Beijing Normal University said: "[Yongchang] county is on the Silk Road, so there were many chances for trans-national marriages…The 'foreign' origin of the Yongchang villagers, as proven by the DNA tests, does not necessarily mean they are of ancient Roman origin…Even if they are descendants of the Roman Empire, it does not mean they are necessarily from the Roman army. The empire covered a large area. Many soldiers were recruited locally, so anything is possible." Prof Wang Shaokuan has gone further pouring scorn on Prof Dubs's thesis, saying the Huns themselves included Caucasians, Asians and Mongols thus explaining the unusual characteristics of Liqian/Lou Zhuangzi’s residents.

Even so, on 21 November 2010, Newstrack India reported that experts at the newly established Italian Studies Centre at Lanzhou University in China’s Gansu province are looking into the possibility that some European-looking Chinese in Northwest China are the descendants of a lost army from the Roman Empire. Excavations are to be conducted on a section of the Silk Road, the 7,000-kilometre trade route that linked Asia and Europe, to see if a legion of Roman soldiers settled in China. Yuan Honggeng, head of the Centre, hopes to prove the legend by digging and discovering more evidence of China's early contact with the Roman Empire.

The Daily Mail story of 29 November 2010 is interesting for the misleading connections it makes to provide substance to the original Dubs theory and to perpetuate the myth. According to the story’s author, Niall Firth: “DNA testing of the villagers has shown that almost two thirds of them are of Caucasian origin. The results lend weight to the theory that the founding of Liqian may be linked to the legend of the missing army of Roman general Marcus Crassus.” Mr. Firth fails to mention, however, whether the DNA testing he refers to is more recent than the 2005 study. One can only assume that this is the earlier story regurgitated and thus not new evidence of proof.

Of interest, the article concludes with the bold statement that: “As part of their strategy Romans also hired troops wherever they had conquered and so many Roman legions were made up not of native Romans, but of conquered men from the local area who were then given training.” The implication is for evidence of some form of Chinese legion, but actually provides readers with a confused view of Roman history and more specifically the nature of military recruitment in the late Republic. In 110 BC the Roman army was composed of propertied men mostly of moderate means, but means nonetheless. They fought for the Republic because it was their duty as citizens. They were the Republic. By 107 BC a series of reforms, often attributed to seven time Consul Gaius Marius, had led to men with no means, who had to be equipped by the state, joining the Army. While the reforms were probably gradual to meet the circumstances faced by an expanding fledgling empire, they were the first steps towards a professional Roman army. In turn this resulted in a greater loyalty of these men to their leaders and their unit than the Republic. Leap forward in time to 
AD 400 and the legions were predominantly Germanic in origin, and supplemented with “foederati”, barbarian allies from beyond the Empire’s borders. But in 53 BC, the start point for the myth, this had yet to happen. The legionaries who marched with Crassus would have been Roman citizens, albeit with newly enfranchised Italian allies after the Social War. A century after Crassus and the legions of the Julio-Claudians were probably still mostly Italian. Clearly not an admixture of ethnic Chinese and Romano-Italians.

The recruiting of “foreigners” was not the exclusive purview of Rome. Pliny, for example, implies that the Parthians actively recruited prisoners for military service and the Roman historian Horace claims that the survivors of Carrhae were integrated into the Parthian army and married to local women. If this is accepted, then it is entirely plausible that the legionaries’ fate was to be moved to the far eastern fringes of the Parthian empire in Turkmenistan for use as border guards against the Huns - a practice familiar to many Auxiliary soldiers serving Rome on its imperial frontiers. There is, however, a problem with timing.

In 20 BC, during negotiations for the recovery of the standards lost at Carrhae between Augustus and the Parthians, it was stated that there were no prisoners to be returned. Various theorists have used this to substantiate the idea that the Romans must have migrated eastward to China as they were obviously no longer in Parthian hands. Unfortunately the negotiations were 33 years after Carrhae at a time when the life expectancy of a male soldier in the late Republic was between 45 and 50 years (excluding the risk of death in battle or other such mortal hazards). If we assume that most soldiers were aged between 17 and 30 years old during Crassus’ ill-fated expedition, then this would place them in the age bracket of between 50 and 63 years old which, when subject to scrutiny, seems highly unlikely and somewhat undermines the theory.

So, how to explain the Caucasian appearance of the Gansu villagers without the Roman hypothesis. Actually there is relatively straightforward explanation for the so-called “Chinese Romans” as explained in more much detail by Razib Khan in his blog entry “No Romans needed to explain Chinese blondes”. Based on gene studies, Mr Khan contests that they “are from the same population mix, roughly, of the Uyghurs”: a hybrid population with about a 50/50 West/East Eurasian mix that is the ultimate genetic result of the migrations and assimilations of peoples throughout the Eurasian region between AD 500 and AD 1000. Like many European populations, the Uyghurs have a West Asian and Northern European aspect, but critically they lack the South European ancestry. This is important, because it is dominant in both the Tuscans and North Italians. If the “Roman Chinese” are genuinely Roman, they will have this specific southwest European ancestry, but even the earlier 2005 DNA tests have yet to definitively prove the genetic link. For now, the Gansu villagers “are simply part of the normal range of variation on the Western borders of China, which was inhabited by European looking peoples like the Tocharians until relatively recently.” The people of Liqian are essentially a Chinese speaking group whose ancestry, with its equal portions of West and East Eurasian influence, creates the illusion necessary for this story’s persistent survival.

More Tea?

As costumed re-enactors know only too well there are occasions, especially in the height of yet another glorious British summer, when a warming cuppa would be most welcome.  If, however, your chosen period pre-dates the reformation, then you have a bit of a problem.  Imports of tea into Britain began in the 1660s with the marriage of King Charles II to the Portuguese princess Catherine of Braganza who brought the tea drinking habit to court.  So, while in "character" as, say, a Roman, some people never tire of pointing out that tea was unknown to them.  Thus the simple pleasure of enjoying a warming brew would be anachronistic and inappropriate.   Yet this got me thinking...we know from the writings of Pliny the Elder (Natural History Book VI) that the Romans were trading with China, so why was it that tea was never mentioned?

To find the origin of the refreshing cuppa, it is necessary to travel back to the year 2737 BC.   According to Chinese legend, the Emperor Shen Nung only ever drank boiled water until one day, while sitting beneath a wild tea tree, a breeze caused some of the leaves to fall into his pot of boiling water.  He found the resulting taste so stimulating that the practice of tea drinking was begun there and then.   Sadly it is not known whether the Emperor actually existed, or if the story is simply a convenient myth.  It is generally accepted, however, that drinking tea was popular in China long before it was ever exported to the West.

The first written reference to tea does not appear until the 3rd century BC when a renowned Chinese surgeon said it improved concentration and alertness.  There is still some debate whether the surgeon was actually recommending tea or sow thistles, however.  The confusion has been created by use in the record of the Chinese word tu, which is used interchangeable for both tea and sow thistles!  The eventual distinction between the two plants was made sometime between 206 BC and AD 220 when an emperor of the Han Dynasty ruled that tea should be pronounced “cha” - from where, until quite recently, we British get the slang term for a cup of tea.

Until the 3rd century AD, tea was only ever used as a medicine derived from the leaves gathered from wild trees.  But as demand increased, Chinese farmers began to cultivate the plant.  Tea’s popularity continued to grow during the 4th and 5th centuries AD, with plantations established along the Yangtze River valley.  Tea began to appear everywhere - taverns, wine stores, noodle houses; in fact, it was held in such high regard it was even presented as a gift to the Emperors.  By this time, of course, the Roman Empire was beginning its steady and irretrievable decline.  Sadly, therefore, the Romans never had chance to enjoy a good ol’ cuppa Cha an’ a slice a cake!

A Brief History of Foods: Salt

"A Brief History of Foods" is mostly aimed at improving my knowledge on the origins of the foodstuffs commonly eaten in Britain throughout its long history.  Over the years I have been surprised to learn how few of our commonly used ingredients are actually native to these shores, and just how many were introduced, when and by whom.  Perhaps you too might discover something new and quite interesting.
Salt is a chemical compound of sodium and chloride (NaCl) and is an essential nutrient, the amount of which in the diet has a direct influence on health. Today, it is almost universally accessible and relatively cheap. Most of us probably take salt for granted, but it was not always the case. It has been central part of human history for thousands of years largely due to salt's ability to preserve food. It was this property that effectively removed man’s dependence on the seasonal availability of food and increased the opportunities to travel long distances.

Some of the earliest evidence of salt processing dates to around 6,000 years ago, when people living in Romania were boiling spring water to extract the salts; a salt-works in China has been found which dates to approximately the same period. Salt was prized by the ancient Israelites, the Greeks, the Romans, the Byzantines, the Hittites and the Egyptians
[1]. As such salt became a highly prized article of trade and was transported by boat across the Mediterranean Sea, along specially built salt roads - some of the earliest dating to the Bronze Age, and across the Sahara in camel caravans. The scarcity and universal need for salt has led nations to go to war over salt and use it to raise tax revenues. Salt is also used in religious ceremonies and its cultural significance has led some commentators to argue that it was a contributing factor in the development of civilisation.

In the early years of the Roman Republic, with the growth of the city of Rome, roads were built to make transportation of salt to the capital city easier. The most obvious example is the via Salaria , literally the “salt road”, that leads from Rome to the Adriatic Sea. The Adriatic, having a higher salinity due to its shallow depth, had more productive solar ponds compared with those of the Tyrrhenian Sea, much closer to Rome. It is commonly believed that, at certain times, Roman soldiers were paid with salt, hence the word “salary”, but this is unlikely. The Latin word salarium does seemingly link employment, salt and soldiers, but the precise link is far from clear. This misunderstanding probably stems from the Roman historian Pliny the Elder, who stated as an aside in his Natural History's discussion of sea water, that "[I]n Rome...the soldier's pay was originally salt and the word salary derives from it...".[2] Today it is more generally accepted that, although Roman soldiers were typically paid in coin, the word salarium is derived from the word sal (salt) because at some point a soldier's salary may have been an allowance for the purchase of salt[3] or the price of having soldiers conquer salt supplies and guard the salt roads, i.e. via Salaria, leading to Rome.

During the late Roman Empire and throughout the Middle Ages salt was a precious commodity carried along the salt roads into the heartland of the Germanic tribes. Caravans consisting of as many as forty thousand camels traversed four hundred miles of the Sahara bearing salt to inland markets in the Sahel, the semi-arid zone that stretches across the south-central latitudes of Northern Africa between the Atlantic Ocean and the Red Sea. Such markets traded salt for slaves: Timbuktu, for example, was a huge salt and slave market. Elsewhere, in China for example, salt was both a driver of technological development and a stable source of revenue for the imperial government.

There have been two main sources for salt: sea water and rock salt. Rock salt occurs when water in enclosed lakes, playas (or salt pans) and seas evaporates leaving behind vast beds of the mineral, some of which can be up to 350 metres thick. In the United States and Canada, for example, extensive underground salt beds extend from the Appalachian basin of western New York through parts of Ontario and under much of the Michigan basin. While in the United Kingdom underground beds are found in Cheshire and around Droitwich in Worcestershire.

On an industrial scale, salt is produced in one of two principal ways: the evaporation of salt water (brine) or by mining from underground beds. Evaporation can either be solar evaporation or using some heating device to produce salt crystals.

In the correct climate it is possible to use solar evaporation of sea water to produce salt. Brine is evaporated in a linked set of ponds until the solution is sufficiently concentrated by the final pond so that the salt crystallises on the pond's floor. This is the method recorded by the Roman authors where, in order to aid natural evaporation, shallow rectangular ponds (multifidi lacus) were dug, divided from one another by earthen walls. The opening and closing of sluices (cataracta) allowed sea-water into these pools through canals. The water was more and more strongly impregnated with salt as it flowed from one pond to another. According to Pliny the Elder, when reduced to brine (coacto umore) it was called by the Greeks ἅλμη, by Latin speakers salsugo or salsilago, and by the Spaniards muria. In this state it was used by the Egyptians to pickle fish[4], and likewise by the Romans to preserve olives, cheese, and meat[5]. As the brine left in the ponds crystallised, a salinator had the job of raking out the salt and laying it in heaps (tumuli) upon the ground to drain.

Solar evaporation salt works

Throughout the Roman Empire salt-works were commonly public property, but were leased by the government to the highest bidder. The first salt-works are said to have been established by Ancus Marcius at Ostia.  The important point, however, is that energy is required to evaporate the water or mine the salt. In these cases, the costs of fuel and labour have an impact on the cost of the end product of salt. The cost meant that, in the classical Mediterranean world at least, there was greater reliance on the use of fish sauce, or garum, as a cheaper more accessible substitute for salt.


As for the solution mining of salt, the earliest examples of pans date back to prehistoric times where the pans made of a course ceramic known as briquetage. Later examples were small pans about one metre square (3 ft square) made from lead and using wood as a fuel. After the Middle Ages pans started to be made from iron, firstly in pans measuring about 2.1 m (7 ft) by 2.4 m (8 ft). Over time pans have gradually increased in size until they are typically 6.1 m (20 ft) wide by 9.1 m (30 ft) long. Regardless of their size, brine would be pumped into the pans and concentrated by the heat of the fire burning underneath. The change from lead to iron pans coincided with using coal instead of wood to heat the brine. As crystals of salt formed these would be raked out and more brine added.

In the second half of the 19th century, industrial mining and new drilling techniques made the discovery of more and deeper deposits possible, increasing mined salt's share of the market. Although mining salt was generally more expensive than extracting it from brine via solar evaporation of seawater, the introduction of this new source on an industrial scale had the overall effect of reducing the price of salt.

Today one of the largest salt mining operations in the world is at the Khewra Salt Mine in Pakistan. The mine has nineteen storeys, eleven of which are underground, and 400 km (250 miles) of passages. The salt is dug out by the room and pillar method, where about half the material is left in place to support the upper levels. Extraction of Himalayan salt is expected to last 350 years at the present rate of extraction of around 385,000 tons per annum.[6] In 2002, total world production (of sodium chloride in general, not just table salt) was estimated at 210 million tonnes[7].  Five years later global production had increased by 12% proving salt continued inestimable value to us all.
